Does this change the page size?
No. Pages are re-rendered at high resolution but written back at their original dimensions.
Why does the text look like an image afterwards?
Colour adjustment works on rendered pixels, so pages become images. Use Extract Text first if you need the text layer.
What does gamma do?
Gamma brightens or darkens midtones without clipping blacks and whites, which is usually gentler than a brightness change.
